Ligurian wines at the Ristorante Al Castello The most famous ligurian traditional wines. Amongst our cellar's wines we count the best ligurian d.o.c. wines as vermentino, pigato, rossese. The vermentino is a white wine, gently mild, straw-colour with intense perfumes of field flowers, and a hint of yellow peach. The pigato is a pale yellow wine which turns to golden in the second year; rather dry, mild, of fruity taste. The rossese is a ruby red wine, of mild flavour, fragrant and bodied, of intense perfume.
